Lemon and Lavender Chicken



When I saw Rachel prepare this chicken dish on her show The Little Paris Kitchen on the tele I thought, OK, sounds interesting.  Then when she was finished and tasted it, Rachel’s eye lite up and she *signed*.  At that moment I knew I had to try it.  And boy o’boy and I glad I did.
This has got to be the easiest and most delicious chicken ever.  I wanted more…. And today I’m making it again after having prepared it just last week for the first time.

The marinade was so fast to throw into a large zip lock bag.  2 tbsp. dried culinary lavender, 4 tbsp. olive oil, 4 tbsp. honey, 2 sprigs thyme and the juice and zest of one lemon.  Add to the bag your chicken pieces and let it sit a couple of hours in the refrigerator.

This super moist savory and just slightly sweet and a little sticky chicken was to-die-for.  We enjoyed it so much that I copied the recipe and a bag full of lavender into envelopes and shipped them off to both of my daughters.  I hope they loved it as much as I did, and if we’re lucky they will give us some feedback very soon.  The addition of lemon and lavender was amazing and I’ve been looking for more recipes to use the overabundance of culinary lavender I know store.  Does anyone have a recipe to share with me using lavender?
