The first step was to create a Crème Patissiere with cocoa,
very much like pudding, and oh so delish. Whisking, cooking, more whisking
and more cooking… then to cool in the refrigerator. Second, the chocolate meringue, as you would
imagine with meringue, more whisking.
Melting the chocolate and more whisking. And third, the whipped cream… oh my. Folding in all the elements at this point was
a relief from all the whisking. But
ultimately, this was the most amazing mousse.
Light, rich, and oh so chocolaty and the nibs just put it over the TOP!!
Aside from the whisking the hardest
part was waiting. My labor and patience
paid off and I will definitely make the chocolate mousse again.
